Ingredients
- 60ml 1962 Gin
- 10ml Green Chartreuse
- 10ml Fino Sherry
- Dash Orange Bitters
New Distillery, new gin! I was lucky enough to get a bottle of Gin to play around with from the guys over at Route 1 Distillery that recently opened up. As with any new gin, I usually start with a Martini of some sort to get a real feel for the gin. It’s crisp, Juniper and Peppercorn forward gin, so I felt adding in a little Green Chartreuse to bring subtle herbal notes to the drink, with the Fino there to give a little texture to the body. After tasting these together, I felt it need a bit of citrus so I added in the orange bitters to fill that void. In the end, you get a nice strong, herbal and fresh Martini.

First off, Look at the colour of this beauty. Just me or does it scream “drink me, it’s way too damn hot outside”. This is one I found as a riff on an aviation but I find this far better. It’s light, floral and sour but in a very well balanced way, and Did I mention the colour?

The Classic Negroni is a widely debated spec amongst bartenders and any cocktail enthusiast. Does a Negroni need Campari, or can you use any bitter red amaro? In my opinion, you can use any bitter red amaro, why can I substitute the gin or vermouth but not the amaro?!

- Green Chartreuse Rinse
I find Martini Variations quite fun because it’s a fairly delicate drink that you can really try to pull some complex flavours out of. This one is Juniper forward with a slight bitter smoke in the background. The Chartreuse Rinse adds more of a cold/fresh element that that works with the Juniper really well. The Blackcurrant and Birch bitters play a pretty big role here co-starring with the Gin and adding a really calming aroma. For me this reminds me of May in the north where Spring is only just starting to poke its head out.

I suppose this is actually a Negroni Riff. I never for it to be but I found flavours and I chased them and then came upon this little Winter Negroni. I’ve said it before and Ill say it a million times more, Mia Amata Amaro and Saskatoons go so damn well together, so why not put em in a negroni right?

- 20ml Bianco Vermouth – Esquimalt Wine
- Coffee Infused Absinthe Rinse
I suppose this is in a way a Variation on the Cardinale Cocktail. Heavy on the Gin in this one to get the Coriander to pop out, the Bitter Orange is right and front and centre and the Banana sits in the background really just rounding out the drink with a subtle Tropical note

- 40ml Grapefruit Juice
- 20ml Lemon Juice
- 15ml Winter Syrup
- Dash of Peychauds
- Egg White
- Absinthe Spray
I don’t often use Grapefruit in my drinks, mainly because I find it somewhat difficult to pull off in a way that I enjoy. I
have found that winter spices like, cinnamon, anise, clove, etc. work really nicely with Grapefruit.
